At about $12 a bottle this everyday table wine will satisfy most wine drinkers thirsts. Not a typical earthy tasting Merlot. A silky, jammy wine. Cab Sav like. Or as the BS line goes, “a Cab Sav lovers Merlot”. Sweet and chewy it will marry well with tomato sauce. The acidity of the sauce will add the acidic balance missing form the wine and even it all out in the mouthfeel. The perfect food match to this Sonoma based Merlot is roasted black fur squirrel from Syracuse NY. Preferable caught in mid-winter giving the meat a more nutty taste. Add a Guatemalan gorgonzola sauce and garnish with Guadalupe harvested jalapenos. Serve over pan toasted Tahitian wild red rice with dehydrated West Indies grown acai berries.
